An inside look at how evolving consumer trends and market expansion are reshaping the chocolate industry

The chocolate market has transformed considerably over the last decade, driven by complex supply chain dynamics, climate change and evolving consumer tastes, there's a notable pivot in consumer demand.

Ethical sourcing ranks high on the agenda, with brands like Tony Chocolonely and Green & Black's showcasing this as a key feature. Consumers increasingly opt for dark and premium chocolate, driven by health considerations and a penchant for novelty in a saturated market.

Yet, it's not only the character of consumer demand that's evolving, but also its geographical origins. While Europe and North America continue to lead, emerging markets in India, China, and Africa are experiencing a burgeoning demand for chocolate.

Urbanisation and an expanding middle class play crucial roles, along with the global influence of snack and confectionery giants like Mondelez International and Kraft Heinz. In this fast-evolving landscape, adaptability is key for manufacturers seeking to stay on top. Cargill, a forefront leader in cocoa, chocolate, and dessert products, is adapting to ensure its future in the shifting chocolate scene.

Embracing the Asian market, with chocolate

Demand in Asia for chocolate and other rich food and beverage choices is on the rise. Cargill's 2024 proprietary TrendTracker study confirms that consumers in the APAC region crave innovation and novelty, desiring foods with diverse textures, tastes and flavours.

To cater to these needs, Cargill has launched a new cocoa production line at its plant in Gresik, Indonesia.

This line provides specialty cocoa solutions that offer a higher level of customisation, aligning with the Asian market's preference for unique culinary experiences, including desserts that are less sweet than those preferred in Western countries.

Dedicated facility for coatings and fillings

Manifesting its commitment to innovation, Cargill has also established a dedicated facility focusing on coatings and fillings.

This facility not only enhances their production capacity but allows them to further diversify their product offerings, tailoring specifically to regional tastes and consumer demands across the globe.

The manufacturer had previously launched the Cargill Cocoa Development Centre in Gresik to drive innovation and development. Now celebrating a new production line to this, Cargill has brought to market two dark Gerkens cocoa powder range and a new range of Cargill® Craft cocoa liquors.
